LIVE Japanese Happy Hour - Chuhai and Okonomiyaki (Japanese Savory Pancake) Class with Tomoko from Osaka

End your day in Osaka for a Japanese Happy Hour! Join Tomoko and learn how to mix your own Chuhai cocktail using Shochu and how to make her version of the famous Japanese street food, okonomiyaki. The name is derived from the word okonomi meaning “how you like” and yaki meaning “grilled.” This savory pancake batter is usually filled with cabbage, but Tomoko will show you a version that uses scallions instead, perfect for pairing with your cocktail!

In this class, you can follow Tomoko’s list of fillings and toppings for your ingredients, but we encourage you to select your own toppings as well, to make your okonomiyaki “how you like”!

Ingredients & Preparation

Here is a complete list of ingredients. If you do not have them, our chefs will do their best to suggest substitutions.

Note: Have your ingredients pre-measured and prepped before the class for a more seamless experience.

  • If you are preparing homemade okonomiyaki sauce combine the following ingredients in a saucepan and simmer until completely combined.

    • 2 tablespoons oyster sauce or Worcestershire sauce

    • 2 tablespoons ketchup

    • 1 tablespoon sugar


Okonomiyaki
Serves 2

Batter

  • 125 grams (1 cup) all-purpose or cake flour

  • 250 grams (1 cup + 1 tablespoon) water

  • 1 large egg

  • 2 teaspoons Japanese Hondashi/soup stock powder

  • 200 grams (1 cup) green onions, finely sliced

  • vegetable oil for frying

Toppings

Traditional Okonomiyaki toppings include the following, but feel free to add any kind of meat or vegetables which you prefer! We will be making bolded toppings in class.

  • Okonomiyaki Sauce (or see homemade recipe in preparation notes)

  • Japanese mayonnaise (you can also use store-bought)

    • 180 grams (3/4 cup) oil

    • 2 tablespoons rice vinegar

    • 1 egg

    • 2 teaspoons salt

  • Tsukudani

    • 20 grams (2 1/2 cups) bonito flakes

    • 2 tablespoons mirin

    • 2 tablespoons sugar

    • 1 tablespoon soy sauce

    • 4 tablespoons water

    • 1 tablespoon roasted sesame seeds

  • sliced pork or ham

  • shrimp or crab

  • pickled ginger

Chuhai Cocktail
2 cocktails

  • 3 ounces Shochu (or vodka)

  • 7.5 ounces strong carbonated water

  • 1/2 fresh lemon

  • Ice

General Steps

  1. Mix the okonomiyaki batter.

  2. Prepare toppings - mayonnaise and tsukudani.

  3. Fry the okonomiyaki and add toppings.

  4. Mix the cocktail and enjoy it with okonomiyaki!
