Day Two

Step into the hustle and bustle of a lively Bologna local market, selecting fresh ingredients, and sampling a few here and there that will soon transform into a delicious feast during our cooking class. In the hands-on cooking class, you’ll learn tried and true tips for making pasta from scratch and a rich Bolognese sauce. After class, you’ll have the afternoon to explore. Make sure to ask Annie for recommendations!

In the evening, the culinary adventure continues when we visit and have dinner at our local friend, Rita’s, home. She’ll prepare a traditional Mediterranean dinner which is a unique change from the rich food that you’re eating during the trip.

Day Three

We’ll see our friend, Caterina, again at a Parmigiano Reggiano factory, where you'll witness the process behind this iconic cheese through a tour and delicious cheese samplings. We’ll start at the very beginning by visiting the cows on the farm and end up in the factory filled with rows and rows of Parmigiano Reggiano cheese wheels. Next, we’ll delve into the world of balsamic vinegar at Leonardi Balsamic Acetaia led by one of the owners, Alice. This family-owned business will give a unique inside look at the family traditions of balsamic and how they still uphold those traditions today. For lunch, we’ll enjoy a meal that’s designed around the balsamico and all the unique ways it can incorporated into different dishes. After lunch, we’ll stop at Lini 910 Winery for a Lambrusco Tour and Tasting and immerse ourselves in the vineyard's ambiance.

Day Four

Today we bid farewell to Bologna and set our course for the town of Alba in the Piedmont countryside. We’ll have a city tour with our guide, Martina, during which, we’ll get to try a wide variety of pizzas! Then we’ll have a short coffee workshop and tasting at a local coffee shop. The afternoon is yours to explore the surroundings or simply unwind. We’ll end the evening with a group dinner, where culinary craftsmanship and regional flavors come together. It's an evening to savor the essence of Piedmont, surrounded by good company and the beauty of the countryside.

Day Five

Today we go to Carrù to visit the Scoiattolo Rosso hazelnut farm and the Allemandi pasta factory, two producers that are fiercely loved by Dalla Fonte fans. At the hazelnut farm, you walk through the groves and learn how the nuts are grown, how they're important to the region,  and how they're used in Allemandi's pasta sauces. At the Allemandi pasta factory, our friend and head pasta maker/owner Maurizio will give us a tour of the factory and explain the process that makes them special. We’ll dine on his pasta and sauce for lunch which is extra special because this experience is not accessible to travelers outside of this Dalla Fonte trip. As the day gently winds down, we’ll come together for a group farewell multi-course dinner. The evening promises to be a celebration of the culinary highlights and shared moments of the trip. Amidst the charming ambiance, raise a glass to the memories made, savoring the flavors and camaraderie that have defined this journey.
