Chef Nacho will give you the secrets to this classic Peruvian dessert: Alfajores. These soft, delicate cookie sandwiches, commonly made throughout South America, are held together by a creamy Dulce de Leche center. Perfect for the whole family to get involved for a sweet treat!


Ingredients & Preparation

Have your ingredients pre-measured and prepped before the class for a more seamless experience.
If you do not have certain ingredients, our chefs will do their best to suggest substitutions.

Before class: Please bring your butter to room temperature.
Enjoy some of our favorite Peruvian tunes while you get ready for class! 

Alfajores (Caramel Cookies)

Cookies

  • 500 grams (4 cups) of flour

  • 300 grams (1 1/3 cup) room temperature unsalted butter

  • 70 grams (5/8 cup) of powdered sugar

Dulce de Leche Caramel Filling

  • 1 cup of evaporated milk

  • 1 cup of condensed milk

  • Water

  • 1 cinnamon stick

  • 1 teaspoon vanilla extract (we recommend a high quality vanilla)

Certain commonly used kitchen tools may not be listed here, such as cutlery, dishes, mixing bowls, pots, and pans. Any additional equipment is listed here.

General Steps

  1. Make the dulce de leche filling.

  2. Make the dough and bake the cookies.

  3. Assemble the alfajores!
