Join Gloria in her kitchen in the heart of Florence and bake a cozy apple cake, full of apples, raisins, cinnamon and vanilla. Perfect for cold winter days with a cup of hot tea or coffee.
No oven? No problem! Gloria cooks her cake in a pan on the stovetop, so this recipe is accessible to all.

Ingredients & Preparation

If you do not have certain ingredients, our chefs will do their best to suggest substitutions.
Apple Cake
1 cake
1 lemon
1/3 cup raisins + soaking liquid of choice
*Gloria recommends soaking in rum or brandy, but raisins can also be soaked in warm water for a non-alcoholic version.3 - 4 apples, medium size
3 eggs
1 1/2 cup all purpose flour, plus a bit more for dusting the raisins
1 1/2 cup sugar
1/4 cup milk
1/4 cup vegetable oil
2 teaspoons baking powder
1/4 teaspoon vanilla extract
Pinch of salt
Cinnamon, to taste
Butter to grease pan
Powdered sugar for dusting / decoration
Equipment

1 skillet / non-stick pan with lid - approximately 12” diameter
Kitchen towel or paper towels for drying raisins
Whisk or electric mixer
Fine mesh sieve for dusting powdered sugar
Microplane zester or the small holes of a box grater
General Steps
Grate lemon and soak raisins.
Prepare apples and cake batter.
Layer in pan and cook.
Dust with powdered sugar and serve.
