LIVE Peruvian Happy Hour - Chilcano and Rocoto Relleno (Stuffed Peppers) Class with Chef Nacho from Peru

Join Chef Nacho for a spicy Peruvian Happy Hour! Chef Nacho will teach you how to craft your own refreshing Chilcano cocktail and create delicious Peruvian stuffed peppers, the perfect pair to accompany your cocktail. Relleno is a typical spicy Peruvian pepper but can easily be substituted with sweet red bell peppers for a milder taste.

Ingredients

If you do not have certain ingredients, our chefs will do their best to suggest substitutions.

Have your ingredients pre-measured and prepped before the class for a more seamless experience.

Before coming to class:

  • Please boil your potatoes until soft.


Chilcano
1 serving

  • 2 ounces Pisco (or Tequila)

  • 1/2 ounces lemon juice

  • 5 drops Amargo Angostura (optional)

  • 1 lemon slice 

  • 4 ice cubes

  • Ginger Ale 

Rocoto Relleno
6 stuffed peppers

  • 6 fresh Rocoto peppers (spicy) or red bell peppers (sweet)  

  • 100 grams (3.5 oz) ground beef (can substitute with ground turkey)

  • 1 red onion

  • 3 cloves of garlic

  • 50 grams (1/3 cup) of peas

  • 1 carrot

  • 50 grams (1/3 cup) of green beans

  • 50 grams (1/3 cup) fava beans 

  • 4 eggs

  • 100 grams (1 cup) of shredded mozzarella cheese (or cheese of your choice for melting)

  • 2 boiled potatoes

  • 1 spoon of chopped cilantro

  • 1 ounce olive oil

  • 50 grams (1/3 cup) of peanuts 

  • 1 cup evaporated milk or cream milk

  • Salt, black pepper & cumin

Equipment

Certain commonly used kitchen tools such as cutlery, dishes, mixing bowls, pots and pans.
