Torta Caprese + Negroni

Join Domenico and Maria for a sweet treat in their home on the small island of Capri! If you fell in love with their Torta Caprese al Limone, surely you will want to join to learn the traditional Torta Caprese recipe which uses chocolate and almonds.


Ingredients & Preparation

Have your ingredients pre-measured and prepped before the class for a more seamless experience.
If you do not have certain ingredients, our chefs will do their best to suggest substitutions.

Before coming to class…
If you do not have a food processor for the chopping of the almonds or chocolate, please chop by hand before class.

Torta Caprese (Chocolate Cake)
Makes 1 cake

  • 150 grams (2/3 cup) butter

  • 200 grams (1 cup) sugar

  • 2 tablespoons of potato starch

  • 300 grams (1 3/4 cup) whole almonds

  • 250 grams (1 1/4 cup) of dark chocolate (can be baking chocolate or chocolate bars)

  • 6 eggs

  • 16 grams (1 tablespoon) baking powder

  • 1 shot of rum or cognac

  • 1 tablespoon of cocoa powder

Negroni

  • 1 bottle Campari

  • 1 bottle Red Vermouth

  • 1 bottle gin

  • 1 orange

Equipment

  • Mixing bowls

  • Electric hand mixer

  • 10” round cake pan or springform pan

  • Optional: food processor, parchment paper

  • cocktail glass

  • spoon

  • jigger/measuring cup

General Steps

  1. Prepare chocolate and almonds.

  2. Mix batter for the cake

  3. Combine ingredients and bake cake.

  4. Prepare negroni and enjoy!
