Join Chef Nacho from Peru and learn how to make alfajores — soft, delicate cookie sandwiches with a creamy dulce de leche center. While the sandwiches are typically made with a plain flour cookie, these are made EXTRA decadent with chocolate cookies!

Chocolate Alfajores (Caramel Cookie Sandwiches)
Makes 1 1/2 dozen cookies
Cookies
450 grams (3 5/8 cups) flour
50 grams (1/2 cup) powdered cocoa
300 grams (1 1/3 cups) butter, softened
70 grams (5/8 cup) powdered sugar
1 teaspoon of vanilla essence
Dulce de Leche
1 cup of evaporated milk
1 cup of condensed milk
1 teaspoon of vanilla essence
1 stick of cinnamon
