Eggplant Parmesan

Join Chef Alain from Tuscany to learn how to make delicious eggplant parmesan! In just a few steps, Chef Alain will show you how to take simple ingredients and turn them into a beautiful layered dish to share!

Ingredients & Preparation

Have your ingredients pre-measured and prepped before the class for a more seamless experience.
If you do not have certain ingredients, our chefs will do their best to suggest substitutions.

Eggplant Parmesan
Serves 2

  • 1 big eggplant or 2 medium

  • Parmigiano-Reggiano cheese - as much as you like, or another salty and hard cheese (can be purchased here)

  • 200 grams (about 1 cup) fresh mozzarella cheese (can be purchased here)

  • 300 grams (1 1/3 cups) tomato sauce or peeled tomatoes pre-blended' (can be purchased here)

  • 1 medium onion

  • 2 cloves garlic

  • Fresh basil

  • Sea salt

  • Pepper

  • Salt

  • Extra virgin olive oil

Equipment

Certain commonly used kitchen tools are not listed here such as cutlery, dishes, mixing bowls, pots, and pans. Any additional equipment is listed here.

  • Knives

  • Cutting board

  • 1 saute pan

  • Baking sheet

  • Spatula or wooden spoon

  • Cheese grater

  • Paper towels
