Eggplant Parmesan
Serves 2
1 big eggplant or 2 medium
Parmigiano-Reggiano cheese - as much as you like, or another salty and hard cheese (can be purchased here)
200 grams (about 1 cup) fresh mozzarella cheese (can be purchased here)
300 grams (1 1/3 cups) tomato sauce or peeled tomatoes pre-blended' (can be purchased here)
1 medium onion
2 cloves garlic
Fresh basil
Sea salt
