In partnership with our friends at Highside Distilling, learn how to make two Valentine’s Day themed cocktails: a Rosina highball and Amaro y Cafe. During class, Carlotta will teach you how to make a typical dish from the region of Milan: a creamy courgette risotto with chunks of mozzarella di bufala.
Reserve a spot for class below and purchase the cocktail kit through Highside, which will include most of the ingredients needed (see recipe list to buy other items needed).
If OUTSIDE of the Seattle Area purchase your cocktail kit by Monday, February 1st to guarantee shipment by class date.

Have your ingredients pre-measured and prepped before the class for a more seamless experience.
If you do not have certain ingredients, our chefs will do their best to suggest substitutions.
Before class: Prepare the saline solution for Rosina Highball (if desired) and make the demerara syrup with the sugar provided by Highside as indicated below
Please remove the mozzarella out of the refrigerator 2 hours before class.
Creamy Courgette Risotto
Serves 4
2 courgettes (zucchini)
2 vegetable stock cubes
1 liter (4 1/4 cups) water
300g (1 1/2 cups) arborio or carnaroli rice
1-2 handfuls grated fresh parmesan cheese
2 fresh buffalo mozzarella balls (like this)
Extra virgin olive oil
Salt & Black pepper
½ cup white wine (optional)
½ tsp chili flakes (optional)
Rosina Highball
(*Starred items are included in the cocktail kit, other items to be supplied by guests)
1.75 oz Highside Amaro Rosina*
1 oz Fresh Plum Juice*
.5 oz Fresh Lemon Juice
Soda Water
Garnish: Maraschino Cherry (optional)
1 dropper Saline Solution (optional)
To make: Mix 3.5 tsp sea salt in 1/3 cup water and stir until dissolved. Store in dropper bottle for easy use.
Amaro y Cafe
(*Starred items are included in the cocktail kit, other items to be supplied by guests)
1.5 oz Highside Amaro Mele*
.75 oz Cold Brew Coffee*
Fresh Grated Nutmeg*
.25 oz Demerara Simple Syrup* - make syrup ahead of time
To make: Bring equal parts water and Demerara sugar to a boil, stirring until fully dissolved. Cool before using.
.25 oz Heavy Cream
2 Dashes Chocolate bitters (optional)

1 deep non-stick pot
1 wooden spoon
1 sharp knife
Cocktail shaker (or jar with lid)
Grater
Strainer
Jigger (or measuring cup)
Collins and coupe glasses (or any glassware of your choice)
General Steps
Prep the vegetables for risotto.
Mix Rosina Highball.
Cook the risotto.
Mix Amaro y Cafe.
Cook all together, finish with cheese and chili.
Serve and enjoy!
