LIVE Tortellini Class with Gloria from Florence

Join Gloria in her kitchen in a central apartment in the heart of Florence. Gloria taught cooking classes for years so she’ll give you tips for the cutest, perfectly shaped tortellini. This is a great class for learning home cooking techniques and great for the whole family.

Please be mindful of the time of the class you sign up for and your own time zone. After registration, you will receive a link to the Zoom online meeting session we will use. At the beginning of the cooking class, we will introduce the chef and start with some general information. For questions, please email hello@thetablelesstraveled.com.

Ingredients

The expectation is that you will have some common household ingredients like salt, pepper, seasonings, olive oil, etc. Here is a complete list of ingredients. If you do not have them, our chefs will do their best to suggest substitutions.

Note: Have your ingredients pre-measured and prepped before the class for a more seamless experience.

Tortellini
Serves 2

Pasta Dough

  • 200 grams (1 5/8 cup) flour (00 preferred (can be purchased here)

  • 2 medium-size eggs

  • 1 tsp Salt

Filling

  • 85 grams (3 ounces) ground veal meat (or ground beef)

  • 85 grams (3 ounces) ground pork meat

  • 55 grams (2oz) prosciutto

  • 50 grams (1/2 cup) mortadella (or a high-quality Bologna meat)

  • 1/2 cup white wine

  • 140 grams (1 1/2 cups) grated Parmesan cheese

  • 1/2 tsp grated nutmeg

  • 1 egg yolk

  • 1/2 stick unsalted butter

  • salt and pepper to taste
